OATMEAL COCONUT CHOCOLATE CHIP COOKIES
A classic chocolate chip cookie with a fresh twist. Soft, chewy and simply irresistible.

If there is one recipe from the blog you make, have it be these Oatmeal Coconut Chocolate Chip cookies. Now nicknamed in our house "Taylor's Cookies", this recipe has become my signature. It's easy to whip at a moment's notice but insanely delicious - the best of both worlds.
This recipe has all the things you love about a traditional chocolate chip cookie but just with a little added punch. I'm a huge fan of coconut and oatmeal - and I feel they make the cookie a bit more special and robust in flavor. The texture is soft and tender due to it being made with shortening rather than butter. They’re pretty heavenly and I’m sure you’ll love them.
YIELD: 2 DOZEN COOKIES
INGREDIENTS FOR COOKIE DOUGH:
1 cups shortening
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 tsp vanilla
1 tsp salt
1 1/2 cups flour
1 tsp baking soda
1/2 cup shredded coconut
2 cups oatmeal
1/2 package semi-sweet chocolate chips
INSTRUCTIONS:
Preheat the oven to 350°F.
In a large bowl, use a hand mixer to combine shortening with white and brown sugar until creamy. Next, add in 2 eggs, vanilla, and salt.
Mix in the flour and baking soda until dough forms.
Add in the shredded coconut, oatmeal, and chocolate chips and mix by hand just until combined.
Chill the dough for at least 30 minutes.
Scoop dough into medium-sized balls on a baking sheet lined with parchment paper.
Bake for 13-15 minutes or until the edges of the cookies start to turn golden brown.* Remove from the oven and let cookies sit on the baking sheet to cool for 5 minutes before transferring them to a cooling rack.
Top with a sprinkle of salt (optional) and enjoy!
*Every oven is different, so make sure you keep an eye on your cookies! I recommend taking them out when the edges are golden brown but the center looks a bit underdone. They’ll continue to cook for 5 minutes on the baking sheet when you remove them from the oven so they’ll be the perfect gooey, soft center!
