PEPPERMINT OREO COOKIES

Chewy, soft, and melt in your mouth. These cookies are the perfect combination of peppermint and chocolate and a true holiday hit!

I’ll be the first to admit, I’m not the biggest peppermint fan. Often times, the flavor is a bit too overpowering and overtakes entire desserts. These cookies on the other hand? Well, these are a different story.

These Peppermint Oreo Cookies are a super soft and chewy cookie loaded with crumbled up Oreo cookie pieces, chocolate chips, and two different types of Andes Peppermint candy. Every single bite of these cookies is even tastier than the last.

I love these cookies because they require no chill time and you can really add in your mix-ins to your heart’s desire. I hope you enjoy these holiday treats as much as I do!


YIELD: 18 COOKIES

INGREDIENTS:

  • 1 cup unsalted butter, room temperature

  • 1 cup light brown sugar, packed

  • 1/4 cup granulated sugar

  • 2 eggs, room temperature

  • 2 teaspoon vanilla extract

  • 2 cups all purpose flour

  • 3/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 16 Oreo cookies, roughly crushed or chopped into medium size pieces

  • 1/4 cup chocolate chips

  • 1/4 cup Andes Peppermint Crunch Baking Chips

  • 1/4 cup Andes Peppermint Crunch Thins, roughly chopped into small size pieces

INSTRUCTIONS:

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

  2. First, beat the softened butter, brown sugar and granulated sugar on medium-high speed with a hand mixer or stand mixer with the paddle attachment until light and fluffy, about 3 minutes or so.

  3. Use a rubber spatula to scrape down the sides of the bowl and add the eggs and vanilla extract. Beat until smooth.

  4. Add the flour, baking soda, and salt and mix until just combined and no streaks of flour remain.

  5. Then, fold in the Oreos, chocolate chips, and both Andes Peppermint chips and crunch thins.

  6. Bake at 350 degrees for 12-13 minutes or until the edges start to turn golden brown and the centers have puffed up, but are still slightly under done.. Transfer to a wire rack to cool before enjoying!
