ICED ORANGE LOAF CAKE
This easy, one-bowl dessert is perfectly moist and citrusy with a light, sweet glaze.

Continuing on my citrus kick (see my lemon bar recipe I posted a few weeks ago here), this Iced Orange Loaf Cake couldn't be more delicious or easier to whip together. I'm always a fan of a one-bowl recipe and this loaf cake is light, bright, and perfect for summertime.
It’s super moist but still very soft and tender and each bite just melts in your mouth. And, if you don't happen to have any oranges on hand, it can simply be exchanged with lemons!
YIELD: 1 LOAF CAKE
INGREDIENTS FOR ORANGE LOAF CAKE
1 cup granulated sugar
1 tablespoon orange zest (1/2 a large orange)
2/3 cups vegetable oil
3/4 teaspoons vanilla extract
3/4 teaspoons almond extract
2 eggs
3/4 cup whole milk
2 tablespoon orange juice (about 1 large orange)
1 1/2 cups all-purpose flour
3/4 teaspoons baking powder
1/2 teaspoon salt
INGREDIENTS FOR ICING
1 1/2 cups powdered sugar
1 Tablespoon orange juice (about 1/2 an orange)
1 Tablespoon milk or cream
1 Tablespoon butter, melted
pinch of salt
1 teaspoon vanilla extract
INSTRUCTIONS:
Preheat the oven to 350°F and spray a loaf pan with non-stick spray then line with parchment paper.
In a large bowl, use a hand mixer or wooden spoon to combine the granulated sugar, orange zest, vegetable oil, and vanilla/almond extract. Next, combine the eggs, milk. and orange juice until creamy.
Mix in the flour, baking powder, and salt until combined. The batter will be on the thinner side!
Pour the batter into the prepared loaf pan and bake at 350°F for 1 hour - 1 hour and 10 minutes or until the top is golden and a knife inserted into the middle comes out mostly clean.
Allow the cake to cool for about 45 minutes, then make the icing.
Make the orange glaze while the cake cools. Combine all the ingredients for the icing in a bowl and whisk together.
Once the bread is cool pour the glaze over the bread, allowing it to drip down the sides. Let the glaze set for a few minutes to set before slicing and enjoy!
